Carrots are awesome. They’re a source of fibre, antioxidants, digestive enzymes and essential vitamins and minerals. They’re crisp and crunchy, perfect for snacks (I love to have them with hummus or peanut/almond butter), plus they’re delicious as a feature or main ingredient in meals. The subtle sweetness of carrots adds that ‘yum’ factor to soul-warming soups served with pappadams or toast! 

Here are a couple of my favourite carrot soup recipes:
(These are actually my Mum's recipes. She is the best cook I have ever known, so believe me when I say they will leave you wanting more!)

Carrot and Cashew Soup

Serves: 10-12

INGREDIENTS:
2kg Carrots, chopped roughly 
4 Large onions, peeled and chopped
2 Heaped teaspoons crushed garlic
8 Cups vegetable stock 
2-3 Tins cannellini beans, rinsed and drained 
2 Cups of cashews
Turmeric, to taste

METHOD:

  1. Simmer the carrots, onions, garlic, stock and cannellini beans in a pot until tender. Remove the pot from the heat.
  2. Add the cashews and a generous sprinkling of turmeric to taste. 
  3. Puree in a blender or food processor until smooth. 
  4. Serve and enjoy!

Sweet 'n' Satay Carrot Soup

Serves: 10-12

INGREDIENTS:
2kg Carrots, chopped roughly 
4 Large onions, peeled and chopped
2 Heaped teaspoons crushed garlic
8 Cups vegetable stock 
2-3 Tins cannellini beans, rinsed and drained 
400g Natural peanut butter
½ Cup sweet chilli sauce
2 Tins coconut cream

METHOD:

  1. Simmer the carrots, onions, garlic, vegetable stock and cannellini beans in a pot until tender. Remove from the heat.
  2. Add the peanut butter, sweet chilli sauce and coconut cream and stir. 
  3. Puree in a blender or food processor until smooth. 
  4. Serve and enjoy!

You’ll notice both of my carrot recipes make large portions, so feel free to halve it if this is too much for you! These soups can also be frozen and reheated.
